S hort maceration of about 6 hours for our Negroamaro harvested in good time to maintain high acidity and very low pH. all the vinification operations of this sparkling wine take place within our factory, from the draft made around December, all the remuage operations, both manual and mechanical, until disgorgement, which takes place at least 12 months after bottling.
