Characteristics and Curiosities
by Fabio Scarpitti, Italian Sommelier Champion
It requires 12 months of bâttonages on noble lees for this white wine, produced by an accurate selection of its best grapes – which are left to mature on the vine for two weeks once the rest is harvested.
It’s a white variety that requires to be left aging in bottle in order to appreciate the evolved notes of southern white wines.
Visual analysis: rich, bright, and glowy yellow colored wine, with a clear and transparent consistency. On the palate it’s dry and pleasantly fresh, with a slight bitter and salty aftertaste, great balance between alcohol and glycerin.
Elegant and complex persistence at the same time. Text by Fabio Scarpitti for Scarpitti Distribuzione snc ©
Combinations
It requires being served at a temperature of 11°C/12°C, inside a medium-large goblet. It matches vegetables/fish/shellfish based main dishes.
