Isabella White
N egroamaro 100% with grapes harvested in mid-August. Only grapes that have not completed the veraison phase are chosen on the plants, usually the third bunch for each bud. The totally white vinification allows us not to extract a lot of color, while the macro oxygenation processes guarantee us the precipitation of the anthocyanins already extracted. The fermentation takes place in the bottle and during disgorgement are dosed 6 gr/ l of sugar.
